Can any one tell me where to find a how to use video or manual to use the PC stitch 11. I am new at this and I can't figure out how to use this to get what I want on the page...

Two pieces of advice:

1: Do the tutorial. Under "Help", there is a tutorial. There are also the standard helps for individual items.

2: Look at the shortcuts that were created when you installed the product. There is a shortcut to a PDF file that is the full manual. If you cannot find it, go to the folder where it was installed (by default C:\Program Files (x86)\PCStitch 11) to find the .pdf file.
