PCStitch is different from what you see as PDFs, JPGs or even printed. The pattern is coded with the definition of each stitch in a special format. That format is interpreted for display and print for color, symbols, background and many other features totally at your control with the various options.
The main advantage of this kind of coding is you can print/display in any size symbol/pattern from very very small to huge without any distortion or blurring of the symbols used to not the intended floss color. PDFs and JPGs will always blur if you enlarge and distort if compressed.
Therefore, if you want to print totally black and white - just choose the desired options for the symbols (black regardless of the color of the floss) and choose any backstitching to be done using the symbol color. It's simply a matter of choosing the desired print options.
