 changing the pattern size

This is probably a stupid question, but I want to make a pattern where 1 stitch equals 1 inch. How do I do that?

The closest you can do is 2 stitches/inch. The pattern Properties has an option for "cloth count". If you have it set for square weave, only one of the two numbers is active.

However, it doesn't really matter. Other than the size of the item and the estimate of how much material is needed (floss and fabric), the grid size is meaningless. You can do any pattern in any grid size that you want. If you have a pattern that says 10 count and you want to do it in 32 count, fine! The result is your final design will be much smaller, and you'll use less fabric and floss. You would probably want to use fewer strands of the floss as well.
