Just click that little "push-pin" icon in the upper right corner of the panel and it will stay on top. It will shift the floss panel at the bottom so all the colors are seen and none are hiding under the available colors.
I do that while setting the colors and then turn it back off again. You can make the symbols panel stay the same way as well as those that appear on the right side (I have all of them "x" out and out of the way - period.
