When I open a New Pattern the Available Colors and Palette are not visible. I can't figure out or find how to display them.

The first thing I would try would be to go to the "View" tab and select "Reset Panel Positions". That puts back all panels, including available colors (on the left) and the current floss palette (at the bottom). You may have to remove some you removed on purpose but it should get back (and keep back) those you have lost by accident.
