You have several questions -- all pretty easily answered.
1: To print with color, check the print options. The first tab (general) of the print dialog has an option as to how to print the stitches. The default is to print the symbols only (black), but there are options for the color blocks and even the symbols over the color blocks.
2: By color count, I'm guessing you want the number of different color flosses in your pattern. You can get make a guess by knowing how many symbols on a line in the floss palette and multiplying by the number of rows. You can also export the floss usage in a .csv file that can be opened by Microsoft Excel or one of it's clones. The number of lines in that file is the number of colors. By default, the floss usage is printed as a key with your pattern so you can see it there.
3: To reduce the number of flosses in your pattern, there is a floss usage tool to remove unused colors. Once you've finished your design, use that and all the excess flosses disappear. You can also map all of one color to another existing color and that will reduce the number of flosses.
If you are new to PCStitch, I recommend you go through the tutorial and just play with it. You can't really hurt anything and this is a case where you can learn through play!
