I know I can change the fabric color after import to see how it will look, but I have the "background" set to just "white" in my source image. But it seems to be blending the content into "white" when smoothing colors and that's not going to look right on the natural beige that I'm using.

But on import, I can only pick shapes to eliminate a background color, not an eyedropper type tool to say "This should not be stitched"...

Any tips on getting this right?

If if you have a color background that matches the pattern, it will still show as stitches. You can remove all of a given color or you can mark areas and say to remove all stitches of a given color in that area. As for "edges", an eye-dropper is what you may need because of the way that colors are converted to stitches. Confetti stitches are expected -- there's just no way to completely eliminate them on import. Tweaking takes care of them.
