If I have a pattern and I change one of its colours to a colour already existing in the pattern. Now I have one colour with two symbols. How do I change the symbol of the old colour to the one of the "new" colour ?

Try doing a replace operation and it should change the symbols, too. That is what you could have done from the start, too.
