Does anyone have any suggestions on what to do or what to use if your pattern is bigger than a hoop, so as not to have to place your hoop over a completed portion of your pattern and potentially flatten completed stitches? I have looked for other fabric stretchers and bigger hoops, but the biggest hoop I have found is 12".

Any suggestions would be greatly appreciated. Thanks for your time and your help.

The only thing possible is a frame. Even that will require you to "roll" the completed portion to either top or bottom if your design is large enough. There is no support available that would be able to handle ALL possible sizes. Some stitchers stitch-in-hand but that puts a lot of stress on the wrists and hands to keep the tension consistent while holding the fabric during stitching.
