Occasionally, when converting a picture to a cross-stitch pattern, I get the same symbol for two different thread colours. This seems to occur more frequently since I started using Windows 7. Is there any easy way to prevent this from happening??

Some of the symbols sets do have duplicates. I believe the PCStitch Symbol Font 3 has recently been corrected to remove the duplicates. You should always looks at any symbols that are automatically generated for you and change and customize them so that you don't have similar symbols too close to each other (like "0" and "o" or "O"). You can always change your symbols as often as you want.
