I must be missing something. I've checked the help and I see that selecting and filling an area is possible. The problem is I can't figure out how to do it. HELP please?

You just select a color and either use the "fill" tool or your defined mouse shortcut at an area within where you want to fill and it will fill every stitch it can with that color until it hit's the boundary.

Note that the boundary is a "wall" of stitches. Backstitches are not boundaries and if there is even a one stitch opening surrounding the area you want to fill, it will "spill" out and fill a much larger area (ctrl-z is useful to"undo" such an error). Diagonally touching stitches DO make a "wall".
