Is there a way to automatically paint all of them in a single colour, which they originally were before I accidentally messed up and saved?

Edit: Nevermind, fixed it. I made a new document with the same dimensions and used the paint tool, and then copied and pasted the pattern over the top.

What you did was probably the fastest way to correct it - if undo didn't work. You might try undo first. Even after a save, the undo might work if done within the same session with PCStitch.
