How can I change color of one single stitch? I remember it was possible earlier but now I cannot do it. Paint changes all the stitches that have same color around the one I'm selecting.

You may have had that area locked as an "object", even temporarily. If that is the case, you need to merge the area into the background. Normally, changing a stitch is just like setting it in the first place, click on it with the desired color set.

Thank you. I was not able to click only one stitch. After your answer I opened another that I had edited earlier. It worked. Then I closed the new one, reopened it and now I can change the color of one stitch. Perhaps I will never know what was the problem, but now I can continue.

It's very simple. Just select the color you want in the palette. Then click on the single stitch you wish to change. It changes just that one stitch without affecting anything else.
