I am trying to import my own images and clipart/doodle into the program to design my pattern. I go to get the file and I am unable to see it listed to select and pull in the program. How should I save the image files so that I may access them through PC Stitch 11?

What format is the image file?

You must specify "preview" to see what you are working on as you select the parameters for your import.

Also, you should have your original image as tiny. The best size is so it is a ratio of 1 pixel to 1 stitch to make things easiest on the conversion of color to stitch color.
