when printing patterns on the last page "instructions" how do you change the very top where it says NO TITLE |

I have NO idea! Whatever you see as the title of each page should show the same on the instruction page, just above where it gives the size of the pattern and then the legend.
I suggest you do a print to PDF or take screenshots (of print preview) and send them to Mark with a full description of the problem.

You set the title in the Pattern Properties. In the first tab of that dialog, you set the title, author and copyright information. It is then used by the print dialog.
