How do I resize my pattern to one piece of paper 8 1/2 X 11

are you talking about the actual pattern or the final stitching. If the pattern, just make sure you print to "letter" paper, that is 8 1/2 by 11.

If the actual stitching, that depends on the count of the fabric and you have to restrict your pattern to a stitch count that matches.
