Is there a stitch marker type of function in PC Stitch Pro? Something that I can use to mark my place and save it on a pattern so I can go in next time and remember where I left off?

You are right. The Note feature would be perfect for that. Did you know you can change the icon for the note to anything you want? So, you could find an icon somewhere that you want to use and have your very own custom marker....

It would work perfectly for what you are trying to do...
