There are three buttons under the available pallet colors: add, symbol, replace.
Suddenly my "symbol" button changed to "blend".
How do I get "symbol" back?

Those buttons refer to what to do with what color you select there. There is a second panel for the symbols. When you select a color (add), it just adds a symbol based on some internal algorithm (usually the "next" available, I think). Then you go to the symbol panel, select the color and then click on the symbol you want to use for that color.

The Replace and blend options are to use the color selected to work with existing colors. Replace is to replace an existing color (I think it takes the "old" color's symbol. Blend is to add a the color you selected with an existing color. The blend is with whatever color is currently selected in your existing palette.
